I had the pleasure of dining here with our wine
broker in Vegas, JD Collins. JD and I poured Carina Cellars as a
featured winery at Bleu Gourmet, and at the end of the evening sat
down and visited with owner Sonny Ahuja and his friend Sean, the
owner of the Rosewood Grill in Vegas. We began the evening with
a glass of Carina Cellars 2006 Central Coast Viognier, and the bright
tropical fruit flavors paired beautifully with the grilled Ahi tuna
appetizer prepared by chef Jeanine (who regrettably could not join
us as she was busy serving some visiting staff from The Food Network).
We followed up with some 2004 Santa Barbara
County Syrah, which we enjoyed with a prosciutto-wrapped
veal with a mushroom risotto. The smokiness of the Syrah paired
beautifully with the veal! Sonny, JD Sean and I ordered 3 different
entrees to share amongst ourselves: JD ordered a sesame-crusted
Halibut with baby bok choy and shitake mushrooms atop a rice cake;
Sonny ordered the pan-roasted Chilean Sea Bass sautéed in
hearts of palm, forest mushrooms with a peppercorn beurre blanc;
and I opted for the Lobster, Crab & sweet corn cakes with roasted
pepper aioli and avocado tomato salsa. We each enjoyed a glass of
the 2004 Westerly Vineyard Syrah with this smorgasbord
of culinary creations, which in my opinion is one of the best vintages
of Westerly Syrah that Joey Tensley has ever made!
Finally, we were all so full, that we couldn’t
possibly think about dessert, so instead we had some 2005
Syrah “7 percent”, and with its bold jammy
flavors and chocolaty finish, was more than sufficient to satiate
any withstanding “sweet tooth”.
